Dario Cecchini puts of course meat at first place at his Antica Macelleria Cecchini. But also the olive oil has a quite high value for him. Because it is needed for the preparation of many Tuscan dishes and Dario also mixes it with a good pinch of his herbal salt for dipping raw vegetables. The olive trees for Dario’s oil grow very close to Panzano in Chianti. The fruits, which are of course harvested by hand with the greatest care, do not have a long way from the tree to the press and then back to the Macelleria. And when you cook with Dario’s extra virgin olive oil you feel like he is always there personally… Because his face is emblazoned on the 0.5-litre bottle of his oil, which connoisseurs describe as fruity, spicy and grassy paired with a delicate spicyness.
Antica Macelleria Cecchini: Welcome to Europe’s most famous butcher!
The Antica Macelleria Cecchini is located just a few meters from the Piazza in Panzano in Chianti - to be precise in Via XX Luglio number 11. Its owner, Dario Cecchini, is famous among chefs all over the world. Mega stars like Jamie Oliver have immortalized him in their cookbooks with millions of copies sold, and the Macellaio from Panzano is often invited to lectures and symposiums all over the world and celebrated there frenetically. In almost all travel guides about Tuscany you will find Dario’s butchery as an absolute must in Panzano in Chianti. Why? Quite simple: because Dario has always had a philosophy of appreciation for the animals and the deriving products. He is also a gifted butcher and a real showman. For example, while enjoying a glass of Chianti Classico in his shop, you can hear Dario singing an aria from Pavarotti in his Antica Macelleria Cecchini, behind the sales counter, or eventually reciting verses from Dante Alighieri. There you can find delicacies such as his fennel salami, the Burro del Chianti, the Sushi del Chianti or the Tonno del Chianti. And when Dario plays the trumpet, it means that it is "dinner time"! Because Antica Macelleria has a Cucina (a kitchen) as Dario modestly calls it, in which three food concepts developed by Dario are served. First the Solociccia - or "only meat". One floor above the Macelleria is the Officina della Bistecca, where fresh Bistecca alla Fiorentina and its variants are prepared on a charcoal grill. The third fleshy food variation is the Dario Doc concept, which consists of freshly grilled burgers without bread, but with many fresh side dishes, mustard and paprika sauce.
