Cold pressed delight for lovers of Tuscany
In addition to the autochthonous Sangiovese grape variety and the international Merlot grape variety, Il Palagio di Panzano has around 1,200 olive trees on an area of almost three hectares - including the varieties Frantoio, Moraiolo, Morcaio and Leccino. Like the grapes, the olives are carefully harvested by hand, usually between the end of October and the beginning of November. Within 36 hours the olives reach the local oil mill, where they are cold pressed under pressure. The centrifugal separation results in pure, high quality Olio Extra Vergine. The olive oil is first stored at a constant temperature in small stainless steel tanks. The oil is bottled only when required - about 1,400 litres of the spicy, fruity Olio Extra Vergine are produced each year in Il Palagio di Panzano. An absolute must for all lovers of Tuscany and its cuisine!
Il Palagio di Panzano: a real insider’s tip for wine connoisseurs in Chianti Classico
The S 222 road, the Chiantigiana, connects Florence, the capital of Tuscany, with Siena and leads through the oldest wine-growing region in the world: the Chianti Classico. Exactly in the middle of this stretch lies the small village of Panzano. If you are coming from Florence, drive up the hill in Panzano you will reach the highest point of the village at the Piazza. And when you go downhill again, you will reach the shop of Monia Piccini, the owner of the winery Il Palagio di Panzano. There the guests can sit at the large tasting table, where Monia offers them for tasting Chianti Classico, Chianti Classico Riserva and Le Bambole, the Chianti Classico Gran Selezione. But also the fruity fresh Rosato, the easy young Ignobile and the Merlot Sangiovese blend Torgentile are waiting to be enjoyed and can be also bought. By the way: from the tasting room there is a wonderful view over the Conca d’Oro, the golden valley, in which also the excellent locations of Il Palagio di Panzano can be seen. Excellent because its special geographical location in the shell-shaped valley ensures a warm climate during the day and a cooler night. Die Zukunft des Weinbaus ist nachhaltig und biologisch
Der erste Chianti Classico, der im Jahr 2007 nach den Grundsätzen des jungen Ehepaares Monia und Franco entstanden ist, wurde als einziger Chianti Classico seines Jahrgangs mit der höchsten Bewertung des renommierten Weinführers „Gambero Rosso“ ausgezeichnet. Aus der Überzeugung heraus, dass die Zukunft des Weinbaus nur auf Nachhaltigkeit basieren kann, wurde die Bewirtschaftung von Il Palagio di Panzano im Jahr 2009 auf biologischen Anbau umgestellt. Im Jahr 2013 folgte schließlich die offizielle biologische Zertifizierung. Nicht umsonst gilt Panzano als der Bio-Distrikt Italiens schlechthin!
Die Rotweine von Il Palagio di Panzano: Typisch fürs Chianti Classico, außergewöhnlich im Glas
Im Weinberg wie im Weinkeller von Il Palagio di Panzano sind Monia und Franco Verfechter natürlicher Prozesse und einer separaten Vinifikation, um die Besonderheiten jeder einzelnen Lage herausarbeiten zu können. Die Weine reifen unter kontrollierten Temperaturen zuerst in Edelstahlbehältern, die zwischen 50 und 100 Hektoliter fassen. Dann gelangt der Wein in edle Eichenholzfässer, wobei darauf geachtet wird, die für die Sangiovese-Trauben typischen Geschmacksnoten zu erhalten und für jeden der Weine einen unterschiedlichen Reifungsprozess zu gewährleisten.
