Extra Virgin Olive Oil from Fattoria Le Fonti Panzano

A golden-green treat

Vicky Schmitt-Vitali and her husband Guido, the two owners of Le Fonti, produce award-winning red wines as well as an outstanding extra virgin olive oil. Around 1,500 olive trees grow and prosper in Le Fonti. The decisive factor for the production of this high-quality olive oil is the rapid and gentle processing of the fruit immediately after harvesting, which takes place depending on the year around the end of October. Cold pressing and centrifugal separation (of oil and water) take place in the local oil mill. The Olio Extra Vergine from Le Fonti is filtered after a short rest period. Immediately after pressing, the olive oil is light green, with the time it shows more and more golden shades. The first pressing in Le Fonti is traditionally celebrated with a pleasurable ritual: pane Toscano roasted over open fire, the typical unsalted white bread of Tuscany, over it the fresh olive oil and some salt. Who has tried olive oil once in such a way, is convinced for his remaining life of high-quality olive oil. Golden-green in colour and spicy in taste, this extra virgin olive oil is perfect for salads, vegetables and of course for all dishes of Tuscan cuisine.

Chianti Classico pure: the Fattoria Le Fonti in Panzano

Vicky Schmitt-Vitali and her husband Guido run the family winery Le Fonti, which Vicky’s father Konrad bought in 1994. The sustainable, organic cultivation and traditional processing of the raw materials combined with the most modern know-how - this combination makes Fattoria Le Fonti right in the heart of Tuscany so successful. The carefully selected range reflects the consistency with which these principles have been implemented: of course there are the typical red wines of the region - the Chianti Classico and the Chianti Classico Riserva, new since the 2013 vintage a Chianti Classico Gran Selezione, the palatable house wine "La Lepre" - but also a fruity Rosato belongs to the range. And last but not least: the super tuscan with the lively name "Fontissimo". The icing on the cake is an extra virgin olive oil for all lovers of Tuscan cuisine. The purest pleasure!

The family vineyard in the Alta Valle della Greve

Compared to other wineries in the area, Le Fonti is a relatively small business with an annual production of around 40,000 bottles. From the care of the vines to the harvesting of the grapes to the production of the wine, the work remains, so to speak, in the family. In 1994, all the vineyards were replanted. The cellar was also renovated and extended. The vineyard extends over an area of 15 hectares - 8.5 hectares of which are vineyards. The autochthonous grape variety Sangiovese - the leading variety in the entire Chianti Classico - but also the international grape varieties Merlot and Cabernet Sauvignon grow here. On the remaining area there are more than 1,500 olive trees. All these plants and their fruits benefit from the special, cooler microclimate that prevails here in the "Alta Valle della Greve", at the back of the Conca d’Oro - the golden valley.
