A wine with a feminine signature
The Chianti Classico DOCG from Azienda Agricola Savignola Paolina is a red wine with style and character that is easy to drink. For years, this red has been moving at a consistently high level of quality. After all, the winery has been owned by the Fabbri family for decades - recently with Swiss participation. On this estate wines are created that are characterized by strong women. At first it was Paolina Fabbri who gave the estate not only her feminine signature, but also her name, Savignola Paolina. Today it is Ludovica Fabbri who is responsible for the handwriting of the wine production. The two women’s supreme maxim: quality, quality and quality again. The Chianti Classico is produced at Savignola Paolina from 85 per cent Sangiovese and 15 per cent Colorino and Malvasia nera. This Chianti Classico matures in French oak barrels for 12 months before being bottled. And then, in the glass, this Chianti Classico shows itself in an intense ruby red, while the characteristic and inviting, slightly spicy-fruity fragrances make their way to the nose. The taste keeps what the nose promises: berries, cherries and sour cherries embedded in a velvety vanilla aroma can be found on the palate. Elegant tannins and fine acidity complete the harmonious impression. A soft, velvety drinking wine, which one does not forget so fast.
Soft red wines with classic elegance
The wines made at Savignola Paolina are all very soft and very accessible, without losing their identity. The premium wine of Savignola Paolina is without question the Il Granaio Toscana IGT, which is produced only in the best years. With two other top wines Ludovica Fabbri proves her flair for wine making: the Chianti Classico Gran Selezione and the Chianti Classico Gran Selezione Cru - 85 per cent Sangiovese and 15 per cent Colorino and Malvasia nera are used for this. The same mixture is used for the Chianti Classico DOCG. Savignola Paolina also has a Chianti Classico Riserva - with 10 per cent Colorino added to the 90 per cent Sangiovese. The result is an elegant and smooth wine with a beautiful structure full of fruit and spice, for which only the best grapes are used. For many years, Ludovica has been committed to the sustainable management of the vineyards, which are mainly used to grow the autochthonous Sangiovese grape variety of Tuscany. The terroir has also played and continues to play a decisive role in the selection of the grape varieties - in addition to tradition, of course. Because they simply use only the varieties which ideally reflect the terroir.
Azienda Agricola Savignola Paolina: a secret tip from Greve in Chianti
The five hectares of Azienda Agricola Savignola Paolina are located in Greve in Chianti. The Fabbri family has owned the winery since 1780. Under Paolina Fabbri - to whom the estate owes its name - Savignola Paolina celebrated its first successe between the two world wars. In 1998 Ludovica Fabbri, who studied oenology, took over the vineyard from her aunt. In 2015, Ludovica sold 70 per cent of her estate to the Swiss couple Luzius and Manuela Caviezel, and 30 per cent is still in her possession. In this way, Ludovica, together with her long-time colleague Luca, can now concentrate fully on her heart’s business and her strength, namely winemaking. Always with the quality demand to produce class instead of mass. And so Savignola Paolina has remained until today a small, but very, very fine and basically classic-traditional winery. Modern vinification methods will also be used in the future. And since Ludovica is able to devote one hundred per cent of her time to wine production, she is currently tasting and experimenting at every turn. In addition, in recent years they have also invested heavily in new barrels and in the cellar.

Heute führen ihre Nachfahren nicht nur diesen Namen weiter, sondern auch den Spirit dieser außergewöhnlichen Power-Frau. Die Mauern des Weinguts erzählen die Geschichte, die neue Technik gewährleistet den tollen Geschmack. Traditionell bedeutet nicht Stillstand, sondern die Erhaltung des Charakters, in dem man seine eigenen Wurzeln ebenso pflegt, wie die Trauben. Diese Weine sind Originale und wenn man etwas näher hinblickt, sind sie eindeutig weiblich.
