Savignola Paolina Chianti Classico Riserva DOCG
Straight & smooth with fruity aroma
Only the best grapes from the best vineyards of Savignola Paolina in Greve in Chianti, not far from Florence, ensure the strong body of the Riserva. They are harvested by hand, meticulously selected and processed with extreme care. These are 90 per cent Sangiovese and 10 per cent Colorino grapes. The wine matures for 14 months in French oak barrels before being allowed to rest in the bottle for a few more months. The aim is to highlight the character of the autochthonous Sangiovese grape variety. Because only when treated with care and understanding the Sangiovese (often referred to as the "bitch") does develop all its dignity, pride and distinctiveness. And this is what this Chianti Classico Riserva is all about. Here you have a red wine in the glass that expresses the true typicality of a Chianti Classico Riserva. A wine in which you can literally taste the gentle processing of the grapes. A wine that presents itself stylish and straightly, yet elegant and supple with a beautiful structure full of fruit and spice. The fruitiness is characterised by aromas such as blackberries and plums, to which spices such as juniper and pepper are added. Sure, this wine has a great storage potential… But to be honest: why waiting if it already tastes so good? Simply for a good meal or to a cosy evening with friends.
Savignola Paolina: a small vineyard with a great tradition
On the way from Panzano to Greve in Chianti you pass the Azienda Agricola Savignola Paolina. A total of five hectares of sustainably cultivated vineyards nestle in the gentle Tuscan hilly landscape. Since 1780 the winery has been owned by the Fabbri family. The most famous member of the family was certainly Paolina Fabbri, who not only gave the wines a good reputation, but also gave the winery her name. Since then the winery has been called Savignola Paolina instead of just Savignola. In 2015, the owner Ludovica Fabbri sold 70 per cent of the shares of the property to the Swiss couple Luzius and Manuela Caviezel, but 30 per cent are still owned by Ludovica. In this way, the trained oenologist, together with her long-time colleague Luca, can now concentrate fully on making wine. Always with the quality demand to produce class instead of mass. And so Savignola Paolina has remained a small, but very, very fine and basically classic-traditional winery up to today. In recent years, however, a great deal has been invested in new barrels and in the cellar, and new vinification methods have been tried and experimented. So there is much to happen here in the future.
Vino rosso, red wine, Rotwein - as far as the eye can see
Only in the best vintages is Savignola Paolina’s premium wine produced: Il Granaio Toscana IGT. The Chianti Classico Gran Selezione and the Chianti Classico Gran Selezione Cru are two more top wines from the Savignola Paolina range: a blend of 85 per cent Sangiovese and 15 per cent Colorino and Malvasia nera are used for these two reds. The same mixture that is also used for the Chianti Classico DOCG, which is very easy to understand. In Chianti Classico Riserva, on the other hand, the dominant 90 per cent Sangiovese is rounded off by 10 per cent Colorino. The result is an elegant and smooth wine with a beautiful structure full of fruit and spice, for which only the best grapes are used. All red wines here have their own unique character - just like the woman who makes the wines, by the way - but which nevertheless remain easily accessible and wonderfully soft. This small, but extra-fine winery offers real drinking pleasures.

Heute führen ihre Nachfahren nicht nur diesen Namen weiter, sondern auch den Spirit dieser außergewöhnlichen Power-Frau. Die Mauern des Weinguts erzählen die Geschichte, die neue Technik gewährleistet den tollen Geschmack. Traditionell bedeutet nicht Stillstand, sondern die Erhaltung des Charakters, in dem man seine eigenen Wurzeln ebenso pflegt, wie die Trauben.
