Chianti Classico: A declaration of love in the heart of Salzburg

In my podcast episode #018, I take you on a very special journey, away from the wineries as so often, but right into the heart of Hangar-7 in Salzburg. Here, in this architectural masterpiece, surrounded by historic aircraft and Formula 1 cars, I have the pleasure and honor of talking to Florian Kempinger, the gastronomic director of Hangar-7, about our shared passion: Chianti Classico. This time, however, from the perspective of a sommelier and the special role of Chianti Classico in the context of a restaurant.

Florian and I have known each other for several years and we share an interest in Chianti Classico. This time I have a surprise for him: a wine from Poggerino from Radda in Chianti, without telling him beforehand what wine it is. His impressions confirm what we both know about Chianti Classico - it is a wine full of joy, characterized by its terroir, from a cooler region of Chianti and the meticulous work of winemaker Piero Lanza from Poggerino.

An extraordinary meeting place: Restaurant Ikarus

In conversation with Florian, we delve deeper into the world of Hangar-7, exploring the diverse gastronomic offering and the philosophy behind the globally unique guest chef concept. It is fascinating to hear how every detail, from the selection of wines to the design of the wine pairing, is thought through to offer guests an incomparable experience.

Florian's insights into the world of Hangar-7 were a real highlight. The wine cellar is a treasure trove of wines from all over the world - from big names to insider tips. Discovering, tasting and finally selecting the wines to present to guests is an art in itself. Florian and his team navigate through this diversity with a mixture of knowledge, instinct and the constant search for something new. Reviews and recommendations play a role, but in the end it is the quality of the wine and the experience it offers that counts. The wine cellar is not just a storage place, but the heart of Hangar-7's gastronomic philosophy, which aims to pair every dish with the perfect wine.

The art of harmony: Chianti Classico and cuisine

Our topic was also the harmonious combination of Chianti Classico with food. Florian, a master of his craft, explained how the complexity, pronounced fruitiness and refreshing acidity of Chianti Classico make it a versatile partner for a variety of dishes. Understanding Chianti Classico as a food companion means recognizing its ability to support and enhance both simple and complex flavors. Whether it's a hearty meat dish, a delicate fish or an innovative vegetarian dish, Chianti Classico offers the perfect balance. This conversation reinforced my conviction that Chianti Classico is more than just a wine, it is also an ambassador of the Italian joy of dining.

Our conversation also takes us back to the memories of our first encounters with Chianti Classico and how this wine shaped Florian's interest in the world of wine. It's a journey full of tastes, aromas and memories that show just how diverse and profound Chianti Classico can be.

Wine as an ambassador for the joy of the Italian table

Finally, we reflect on the evolution of Chianti Classico, the importance of the introduction of the Gran Selezione and how the region and its wines are constantly evolving to delight wine lovers around the world.

I hope that I have succeeded in showing you a piece of my world and perhaps it will inspire some of you to see your next glass of Chianti Classico with different eyes - as a glass full of history, passion and joy.
