If you approach Via XX Luglio number 11 in Panzano in Chianti, on some days you can hear the bass of AC/DC's "Highway to Hell" booming through the narrow alleyway from afar. The Antica Macelleria Cecchini - owned by the world-famous butcher Dario Cecchini - is located right here! If you take a look inside the store, you'll see a sight you wouldn't really expect to see in a butcher's shop: lots of people standing in the sales room, swaying to the rhythm of the music, a glass of red wine in one hand, a piece of fennel salami in the other. And behind the sales counter: Dario Cecchini, joking and chatting with his guests. When the music switches to classical, it can happen that Dario sings an aria in a duet with Luciano - Pavarotti, of course.
A guest of the famous butcher
Dario has been running the Antica Macelleria Cecchini since 1976. In almost all travel guides about Tuscany, a visit to Dario's butcher's shop can be found under the entry "Panzano in Chianti" as an absolute must. Why? Quite simply because Dario has always had a philosophy of respect for animals and the products made from them. He is also a gifted butcher and a real showman. Dario Cecchini himself is not only a celebrity in cooking circles - mega-star Jamie Oliver, for example, has immortalized him in his cookbooks. The Panzanese butcher is also invited to lectures, interviews and symposiums around the globe. Since the Netflix series *Chef's Table* about Dario Cecchini was broadcast, he has become even better known internationally.
Solociccia: meat, meat and more meat!
To this day, Dario says of himself: "I'm not a chef, I'm not a boss - I'm a butcher!" Accordingly, he simply calls his butcher's shop "Macelleria con Cucina" - a butcher's shop with a kitchen. At Dario's, you can not only shop and taste his products, but also indulge your meat cravings to the full - with three different food concepts: Dario opened his first restaurant, Solociccia, more than ten years ago. Solociccia means "only meat" - and that's exactly what was served then and still is today: only meat. With this restaurant concept, Dario brought his own meat dishes to the table for the first time.
Products based on old recipes
For Dario, it is important to revive old recipes that were thought to be lost! Fennel salami or Burro del Chianti as well as Sushi del Chianti, a beef tartare, are a real treat for the palate. Tonno del Chianti is a regional specialty: pork that looks and tastes like tuna. Dario is a master not only when it comes to meat, but also when it comes to everything that goes with it, such as Dario's mustard and Mostarda Mediterranea. Behind the poetic name Il Profumo del Chianti is nothing less than an aromatic herbal salt. Under the Dario Cecchini label, there is also an excellent extra virgin olive oil and dried fennel flowers called Fiore di Finocchio.
To beef or not to beef!
Officina della Bistecca is located one floor above the Macelleria. The idea behind it is to prepare bistecca alla Fiorentina and variations of it on the charcoal grill. In the beginning, there was only one table, which was intended for a maximum of 20 guests. The concept took off and developed so quickly that Dario expanded shortly afterwards. Today, guests are served Dario's meat in several courses, starting with the Sushi del Chianti, through to the three variants of bistecca, Costata alla Fiorentina, Bistecca Panzanese, i.e. the Panzano variant of bistecca, and last but not least, Bistecca alla Fiorentina. The succulent grilled piece of meat is presented by Dario himself, with his legendary words: To beef or not to beef!
